TOVA’S QUICK PICKLED CRUNCHY VEG SALAD

INGREDIENTS:

  • 4 garlic cloves, halved
  • 6 carrots, peeled sliced on an angle
  • 6 celery stalks, peeled, cut into 3 inch pieces
  • 1-2 bell peppers, thinly sliced
  • 1 Kholrabi, peeled, halved, thinly sliced
  • 2 heads cauliflower, stem removed, cut into florets
  • Add dressing and mix.
  • 1&1/4 cup lemon juice (fresh!)
  • 1/2 c olive oil
  • 3 Tbsp kosher salt
  • Mix. Store in fridge. Enjoy.

Make it today and it right away or leave it in the fridge and back on it all week long bc it just gets better and better! I mean who doesn’t love a cold crunchy yummy pickled veg. Mmmmm. I want some now.
