AVOCADO + HEADTS OF PALM SALAD
INGREDIENTS:
- 1 red pepper, diced
- 3 Persian cukes, halved, seeded, thinly sliced
- 12 cherry tomatoes, quartered
- 1 small purple onion, halved, then each half cut in half, thinly sliced
- 1 avocado, cubed
- 2 cans hearts of palm, sliced into 1/4 inch rounds
- 1 can chickpeas, rinsed, drained and patted dried
- Juice of 3 lemons (about 7 Tbsp)
- 2 tsp kosher salt
- 1 tsp coarse black pepper
- 4 Tbsp extra virgin olive oil
