AVOCADO + HEADTS OF PALM SALAD

INGREDIENTS:

  • 1 red pepper, diced
  • 3 Persian cukes, halved, seeded, thinly sliced
  • 12 cherry tomatoes, quartered
  • 1 small purple onion, halved, then each half cut in half, thinly sliced
  • 1 avocado, cubed
  • 2 cans hearts of palm, sliced into 1/4 inch rounds
  • 1 can chickpeas, rinsed, drained and patted dried
  • Juice of 3 lemons (about 7 Tbsp)
  • 2 tsp kosher salt
  • 1 tsp coarse black pepper
  • 4 Tbsp extra virgin olive oil
