BEST EGG SALAD EVER + ALL THE HACK

EGG HACKS:

  • Hard boiled egg hack 1:
  • TAP your eggs! Locate the rounder side of the egg (one is pointy one is round. It’s obvious!) hold it round side up and use a spoon to VERY GENTLY tap. After a few taps (sometimes it’s even the first!) you’ll here a tap that sounds higher pitched. Like a little pop. That means the egg separated from the membrane and it will be really easy to peel!
  • Egg Hack 2
  • Gently place them in salted boiling water. I once read a long time ago the salt makes it easier to peel. Honestly, I’m not convinced but I do it. So just go with it.
  • Egg Hack 3
  • Ice cold water. Whether your cokkkng them for 5/6/7/8/9 minutes, it doesn’t matter. COOL THOSE EGGS DOWN. first of all we don’t then over cooked. Second of all we want to everything we can to make the peeling easy. Do not skip this.

Cooking steps

Step 1

Start by sauteeing two small yellow onions, that are halved and thinly sliced. Cook in 1 Tbsp olive oil and 1/2 tsp salt over medium heat till the literally caramelize. Set aside. Cook and peel your eggs. Follow the rules.

Step 2

Add your eggs to a bowl with Dijon mustard, Hellmans mayo (it’s not a must but if you don’t it won’t be real egg salad. Sorry) a pinch of salt and black pepper.

Step 3

USE A PASTRY CUTTER!!! If you have to buy it just to make egg salad, DO IT! It is worth it! It makes the fluffiest egg salad AND it’s soooooo easy to clean!! I am telling you. GAME CHANGER!!!

Step 4

Now add in your onions, mix and of course TASTE!!! Maybe you need a little more mayo or mustard, maybe a little more salt. Eggs vary. Each batch will require different amounts. Add a little, taste and add more. I trust you! I know you can do this!
