SHEET PAN SKIRT STEAK FAJITAS
INGREDIENTS:
- 1 kilo (2.2lbs) skirt steak (If your skirt steak is very long cut into 5 inch pieces)
- 1 Tbsp apple cider vinegar
- 4 Tbsp avocado oil, divided
- 4 heaping Tbsp Maggie loves tacos spice blend (or your favorite taco seasoning)
- 3 Tbsp lime juice
- 1 red pepper, thinly sliced
- 1 yellow pepper, thinly sliced
- 1 orange pepper, thinly sliced
- 2 medium yellow onions, halved, thinly sliced
- 1-2 jalapeños, thinly sliced
Cooking steps
Step 1
Place skirt steak in a bowl. Cover with cold water and add vinegar. Mix. Cover. Set aside for 30 min. Drain. Add 2 Tbsp oil, 2 Tbsp MLT spice blend and lime juice. Mix to combine. Set aside to marinate (this can sit overnight!).
Step 2
Preheat oven to 200°c (400°f) and line baking sheet with parchment. Add all the veggies along with remaining oil and spices. Mix to combine. Spread in single layer. Use your fingers to create little pockets of space in the veggies and place the skirt steak in them. Pour any marinade in the bowl over the meat. Place baking sheet in the oven, uncovered for about 35-40 minutes. Serve hot anyway you like and enjoy!
