BACK TO SCHOOL CHICKEN 

INGREDIENTS:

  • 20 chicken legs (or 12 things, or 8 breasts), no skin!

FOR THE MAYO:

  • 1 cup mayonnaise
  • 1 tbsp dijon mustard
  • 2 tsp granulated onion
  • 1 tbsp dried parsley
  • 1 tsp kosher salt
  • 1 tsp coarse black pepper
  • 1&1/2 tsp white vinegar

FOR THE CRUMBS:

  • 3&1/2 c panko bread crumbs
  • 2 tsp granulated onion
  • 2 tsp dried parsley
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Zest of 1 lemon

Cooking steps

Step 1

Preheat oven to 350°f + liberally grease a parchment lined baking sheet.

Step 2

Add all the mayo ingredients to a large zip top bag. Smush to combine. Add chicken. Shake to evenly coat. Set aside.

Step 3

Combine breadcrumbs ingredients. Use your hand to really mix zest evenly through out.

Step 4

Remove 1 piece of chicken at a time from bag, place in crumb mixture. Coat evenly. Place on baking sheet.

Step 5

Add any remaining breadcrumbs to zip top bag. Smush to wet them. Sprinkle around chicken. Spray all the chicken with cooking spray. Bake for 45-60 min until chicken is cooked through, crispy and delicious! Serve and enjoy!!!
