VEGGIE PACKED TUNA PATTIES
INGREDIENTS:
- 1 medium yellow onion, finely diced
- 1 medium zucchini, finely diced
- 1 jalapeño, minced (optional but recommended)
- 4 scallions, very thinly sliced
- 1 tbsp olive oil
- 1 tsp kosher salt
- 1 tbsp tomato paste
- 1 tbsp + 2 tsp onion soup mix
- 4 cans tuna in water
- 2 eggs
- 1 cup panko bread crumbs
- 2 tsp capers in brine
- Neutral oil for frying
Cooking steps
Step 1
Preheat large skillet (I prefer non stick) over medium high heat. Controlling the heat is important here, bc we want the patty’s crispy AND to cook all the way through with out burning. Add olive oil and all the veg (except the capers) Cook for 7/8 min, stirring frequently till veg has softened. Add tomato paste, onion soup mix and stir. Cook another 2 min then remove from heat and allow to cook for 5 min. Meanwhile place tuna in a bowl. Add eggs. Mix to combine. When veg has softened add to the bowl with the tuna along with the panko. Mix. Add in capers. Mix again, make sure everything is thoroughly distributed. Wipe out pan, you sautéed the veg in and add enough neutral oil to cover the bottom of the pan. Remove about a heaping 1/4 cup of tuna mixture and form patty. Place in the pan. Repeat, making sure to work in batches so as not to overcrowd the pan. Cook for about 3/4 min on each side till golden brown. Remove and serve hot or cold! We eat them right out of the pan, in sandwiches, wraps and even cut up into salads.
