SALMON TACOS
INGREDIENTS:
- 1 (25 cm) piece of salmon
- 2 Tbsp olive oil
- ¼ cup Maggie Loves Tacos Spice Blend (or any taco seasoning). Slaw:
- 3 cups shredded purple cabbage
- 3 limes, juiced (3 Tbsp)
- 2 Tbsp olive oil
- 2 tsp honey
- 1½ tsp kosher salt
- Place everything in a bowl. Mix to combine.
- Sriracha Lime mayo:
- ½ cup mayonnaise
- ¼ cup sriracha
- ¼ cup lime juice
- 2 tsp kosher salt
- Place everything in a bowl and mix to combine.
FOR THE TACOS:
- Corn tortillas, lightly charred over open flame
- 2-3 radishes, thinly sliced
- 1 Avocado (we didnt have any good ones, but if you do you should use it!), thinly sliced
- 1 cup cilantro leaves
Cooking steps
Step 1
Preheat oven to 200ºC (400ºF) Place salmon on a parchment lined baking sheet. Drizzle olive oil over salmon and sprinkle spice blend over the top. Gently rub into the salmon. Allow to sit for exactly 10 minutes. Place in the oven and bake for 25-30 minutes. Remove from oven and allow to cool for a few minutes, then gently flake into 1 inch pieces o add to tacos.

Grab a tortilla and pile it up! Its that easy.

Alternatively, skip the taco and make a salad using there cabbage as the base!
