EVEN BETTER CABBAGE SALAD

INGREDIENTS:

  • 2 whole cabbage heads
  • 2 Tbsp olive oil
  • 1 tsp kosher salt
  • 2 scallions, thinly sliced
  • (Any other veg you want to add in!)

FOR THE DRESSING:

  • 2 lemons, juiced
  • 1 tsp vinegar
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Cooking steps

Step 1

Preheat oven to (180°c) 350°f. Line baking sheet with parchment paper. Cut cabbage in half. Remove stem. Cut into 1&1/2 inch squares. Place on baking sheet. Drizzle with olive oil and salt. Mix well to coat each piece. Spread into even layer. Bake for 40-50 min until edges are slightly golden. Remove. Cool

Step 2

Combine dressing ingredients in a bowl. Add cabbage, scallion and any other veg you like. Toss, serve and enjoy.
