OLD BAY CHICKEN SALAD

INGREDIENTS:

  • 5 cups shredded chicken breast (from 2-3 rotisserie chickens depending on size)
  • 1 shallot, finely minced
  • 2 celery ribs, peeled, finely minced
  • 1 jalapeno, finely minced
  • 2/3 cup mayo
  • 1/4 cup Dijon
  • 2 tsp old bay seasoning

Cooking steps

Step 1

Put everything in a bowl. Mix well to combine! Store in an airtight container and store in the fridge for up to 3 days.

Step 2

I think this is best after sitting for at least 2 hours!
