    In my house we eat chopped meat at least two or three times a week. i know that sounds like a lot so, I’m gonna break it down for you. My boys are meat and potato kind of people. Only the don’t like potatoes. So that literally leaves me with only protein. In a way, it makes my life much easier because, I don’t have to bother with annoying side dishes, but, coming with different proteins every night gets old really quickly.

    To keep things interesting, and also for the sake of making only one dinner that can feed both my children AND my husband (what? you can get away with only making one dinner a night? YUP. I can) I’ve come up with a few recipes that I can, sort of, spruce up to become an adult meal. So the meatballs that my kids eat for dinner, get turned into this crazy awesome meatball sub for husband.

    The meatballs themselves are seriously amazing. They are bursting with flavor and pair perfectly with the tomatoey goodness that is real Italian gravy. You could easily serve these with a plate of spaghetti and they would still be the best thing on the table. But, if you love your husband if you want to rock dinner, make these subs and serve them with an ice cold beer.

    We are toppings people. You know what I mean. The type of people that need to put a million sauces and condiments in every sandwich, burger, salad, and wrap. This is how I make my subs, because we eat super spicy food around here, but you add whatever veggies, sauces or topping float your boat and just enjoy!

  • Italian Meatballs

    Ingredients

    1. For the meatball;
    2. 2 pounds ground meat ( I like to use a combo of half beef, half veal but use whatever you have)
    3. 1/2 c parsley leaves, chopped
    4. 1 1/2 tsp salt
    5. 1/4 tsp crushed red pepper flakes
    6. 3 garlic cloves, minced
    7. 1 onion, finely grated
    8. 1 tbsp red wine vinegar
    9. 1 large egg, lightly beaten
    10. 1/2 c good, unseasoned breadcrumbs
    11. olive oil, for sautéing
    12. For the sauce;
    13. 1 tbsp olive oil
    14. 1 clove garlic, minced
    15. 4 cans crushed tomatoes
    16. 2 tsp salt
    17. 1 tsp black pepper

    Instructions

    1. For the meatballs;
    2. Add all the ingredients to a large bowl
    3. Mix ingredients to combine, being careful not to overwork the meat and toughen it
    4. Heat a large cast iron skillet over medium high heat
    5. Working in batches so as not to overcrowd the pan, add 1-2 tsp of olive oil and a few meat balls
    6. Brown on all sides until the outside is crispy.
    7. Continue until all the meatballs are browned
    8. Don’t worry about them being cooked through because they will continue to cook in the sauce
    9. Remove meatballs from pan and set aside to make sauce
    10. For the sauce;
    11. In the same pan, add oil and garlic
    12. Sautee for 1-2 minutes, the add the wine
    13. Allow wine to cook down for 3-4 minutes and add tomato sauce
    14. Using a wooden spoon, mix everything together, slightly crushing the pieces of tomato.
    15. Reduce heat and simmer sauce for 20 minutes.
    16. Add meatballs back into the sauce
    17. Stir to make sure every meatball is covered with sauce, cover and simmer for 1 hour.
    18. Serve hot and Enjoy!

    Meatball Sub with Jalapeno and Caramelized Onions

    Ingredients

    1. For the caramelized onion and jalepeno;
    2. 2 large onions
    3. 1 jalepeno, thinly sliced
    4. 2 Tbsp olive oil
    5. 1 tsp. salt
    6. 1 tsp. black pepper
    7. For the sub;
    8. 1 Italian Meatball recipe
    9. 6 small baguettes or 2 large
    10. 1 bag shredded lettuce

    Instructions

    1. In a large skillet over low heat, add oil, onion, jalepeno, salt and pepper.
    2. Sautee until everything is golden brown, soft and tender. About 20-25 minutes
    3. To assemble the sub;
    4. Scoop out the center of the baguettes (save insides to make amazing breadcrumbs) to create a bed for your meatballs
    5. Spread a layer of shredded lettuce on the bottom to protect the bread from becoming soggy. Add meatballs, in a row and top each one with a spoonful of sauce.
    6. Added onion and pepper, close sandwich and try not to eat it too fast!!!
