GLUTEN FREE MUFFIN MAN MUFFINS

INGREDIENTS:

  • 3 cups + 2 Tbsp GF flour blend
  • 3/4 tsp xantham gum
  • (If you use loopy whisks GF flour blend recipe add 1&1/2 tsp xantham gum instead bc store bought 1:1 flours already contain it!)
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 3/4 tsp kosher salt
  • 3 large eggs
  • 1 cup butter, melted
  • 1 cup white sugar
  • 1 cup brown sugar
  • 2 tsp vanilla extract
  • 1 cup yogurt
  • 1/2 cup buttermilk
  • 1 (300g) bag frozen blueberries

Cooking steps

Step 1

Melt butter, then set aside for 5 minutes to cool. In a medium sized bowl combine GF flour, xantham gum, baking powder, baking soda and salt. Set aside. In the bowl of a stand mixer combine both sugars and cooled but still melted butter.

Step 2

Mix until just combined.

Step 3

Add in eggs, one at a time, mixing until each one is just incoperated. Add yogurt and half the flour mix for a few seconds then add in butter milk. Mix until just combined. Add in remaining flour, and at this stir by hand to incorporate. When flour is almost all incorporated add blueberries and gently stir.

Step 4

Spoon 2/3 cup batter in extra large muffin tin and bake for 35-40 minutes or until a toothpick inserted in the center of one muffin comes out clean.
