GF BAKERY STYLE HORN COOKIES

INGREDIENTS:

  • 14-15 oz marzipan (good quality is ideal!)
  • 2 cup almond flour
  • 2 tsp vanilla extract
  • 1/2 tsp salt
  • 2 cup conf sugar
  • 3 egg whites, divided
  • 2 cups sliced almonds
  • 200g chocolate, melted.

Cooking steps

Step 1

Preheat oven to 180°c (350°f) In a food processor combine marzipan, almond flour, vanilla, salt, sugar and 2 egg whites. Mix until it forms a dough. Beat remaining egg white till slightly foamy. Remove 2 tbsp of dough and form a log. Brush very lightly with egg white. Then dip in sliced almond gently pressing them into the dough. Form a rainbow shape. Place on cookie sheet. Repeat. Bake for 15 min until just slightly golden. Allow to cool on baking sheet for 10 min then remove to cooling rack. Once cooled, dip ends in melted chocolate. Replace on baking sheet until chocolate is cooled. Serve and enjoy!
