EASY ONE PAN CHICKEN + RICE

INGREDIENTS:

  • 1 whole chicken spatchcoked, or 8-10 bone-in, skin-on, chicken pieces
  • 2 Tbsp olive oil
  • 1&1/2 cups basmati rice
  • 3 cups water
  • 1 lemon, halved
  • spice blend:
  • 2 tsps paprika in oil
  • 1 tsp turmeric
  • 1/2 tsp ground coriander
  • 1/2 tsp cardamom
  • 1 tsp ground mustard
  • 1 tsp granulated garlic
  • 1 tsp granulated onion
  • 3 tsp kosher salt
  • 1 tsp pepper
  • 2 tsp chicken soup mix

Cooking steps

Step 1

Place all the spices in a bowl. Mix to combine. Set aside.

Step 2

Preheat oven to (180°c) 350°f and Grease a large baking dish. Add 1 Tbsp olive oil and rice. Sprinkle over 2 tsp spice blend. Rub the blend into the rice. Pour water over the rice. Place chicken pieces on top. Squeeze lemon over the chicken (or chicken pieces). Drizzle olive oil over chicken and sprinkle spices. Use your hand to rub spices in, making sure to get some under the skin. Cover with parchment and foil. Place in the oven and bake for 1 hour. Uncover, cook another 20-25 minutes. Serve hot and enjoy!
