1-2-3 FLANKEN ROAST

FOR THE MEAT:

  • 1 flanken roast (4 bones)
  • 2 Tbsp olive oil
  • 2 Tbsp kosher salt
  • 2 Tbsp black pepper
  • 1 Tbsp granulated garlic
  • 1 Tbsp granulated onion
  • 1 cup water

FOR THE GLAZE:

  • 1 cup bbq sauce
  • 1/2 cup 100% silan
  • 1/3 cup yellow mustard

Cooking steps

Step 1

Preheat oven to 120°C (200f) and light grease a baking dish large enough to fit the roast. Place roast inside. Drizzle olive oil and sprinkle spices over both sides of the roast. Rub well making sure to get all the spices into all the books and crannies of the meat. Pour water into the bottom of the pan. Cover with parchment and foil. Place in the oven and cook 10-12 hours (time will vary depending on exact weight, check after 10. Once fork tender it’s ready).

Step 2

Combine glaze ingredients in a bowl. Mix well. Pour over roast. Spread to coat. Cover with parchment and foil. Return to oven and cook another 1-2 hours. Remove. Serve hot and enjoy!
