GF SWEET POTATO PECAN PIE

INGREDIENTS:

  • 6 large sweet potatoes, washed and dried
  • 2 tbsp olive oil
  • 3 eggs
  • 1 tbsp vanilla extract
  • 1/2 cup brown sugar
  • 1&1/2 tsp kosher salt
  • 1/2 cup almond milk

FOR THE PECANS:

  • 2 cups pecans, roughly chopped
  • 1&1/3 cup brown sugar
  • 1 tsp cinnamon
  • 1/2 cup melted margarine
  • 1/2 tsp kosher salt

Cooking steps

Step 1

Preheat oven to 180°c (350°f) place seeet potatoes in parchment lined baking sheet and drizzle oil over them. Rub oil to coat.

Step 2

Cook sweet potatoes 1 hour & 15 min.

Step 3

Remove, allow to cool until cool enough to handle. Remove skin and place in the food processor. Add remaining ingredients for the sweet potatoes to the food processor. Outer until smooth. Make sure to scrape down the sides a few times to ensure everything is evenly blended. Pour into a lightly greased 10in circle pan (or 9×13) and place into the oven to cook for 25 min. Meanwhile make the pecan topping. Add everything to a bowl and mix to create a crumbly mixture. Remove sweet potatoes from oven, gently add pecan crumble on top and return to to the oven. Cook another 35 min and that’s it! Serve hot and enjoy!
