Lemon bars
FOR THE COOKIE LAYER:
- 2 1/4 cups almond flour
- 3/4 cups potato starch
- 1/2 cup white sugar
- 1 egg beaten
- 1/2 tsp fine pink salt
- 1/2 cup avocado oil
FOR THE LEMON LAYER:
- 3 eggs
- 3/4 cup lemon juice
- 1/4 cup potato starch
- 1&1/2 cup sugar
- 1/4 tsp salt
Cooking steps
Step 1
Preheat oven to 180°c (350°f) and line a baking dish with parchment. (Usually I use a square 9×9 but I didn’t have one in the studio! You can use a loaf pan just the layers will be a bit thicker!)
Step 2
Make cookie layer by combining everything in a bowl. Mix well. Pour into pan and press down into a single even layer. Place in the oven and bake for 35-40 min. Remove. Immediately use a cup measure to gently press down on the cookie layer to flatten it and make it a little more dense. Set aside and allow to cool for 30 minutes.
Step 3
Meanwhile lower over to 160°c (325°f) and make lemon layer.
Step 4
Add everything to a bowl and whisk very well to combine.
Step 5
When cookie layer is cooled whisk lemon mixture again (the starch settles to the bottom sometimes) and pour over cookie layer. Return to oven and bake uncovered for an additional 45-55 min. The cookies will be a bit jiggly and bubbly. Remove from the oven. And place in the fridge to cool for 2-3 hours. Remove, slice and dust with lots of confectioners sugar!
