    Did you hear me?

    I said, CHOCOLATE.

    CHOCOLATE!!!!!!

    This dessert is all about the chocolate. Its a super incredible chocolate ice cream base, laced with the most amazing, chewy, chocolatey, chocolate chocolate chip cookie dough, slated condensed milk caramel and fluff. Then, because no matter what yo mamma told you, too much of a good thing is really never enough, all that chocolate goodness gets sandwich between to perfect layers of buttery chocolate brownies.

    I’m assuming that by now you have stopped reading because you just couldn’t take another second of the torture that is not eating this. So, you skipped all this reading and scrolled down to the recipe. If thats the case, good. If not I’m guessing that means you don’t like chocolate (because if you do, you would not need any more convincing). So to all the super boring cool vanilla lovers out there (ahem, eli), don’t worry I got you covered.

    The whole concept of this ice cream, mixing in sweetened condensed milk into whipped heavy cream, is so versatile and easy to use that it can be altered to fit all your dessert needs. It is NOT exclusive to chocolate ice cream. In fact, I have included so many variations to the base and topping of this ice cream in the recipe! Everything from a strawberry cookie dough to peaches n cream, to a pretzel and caramel are all represented.

    O.k. lets dress the elephant in the room now. This recipe requires a few steps.

    1. Make Sweetened Condensed Milk
    2. Make Salted Condensed Milk caramel (which, fyi, happens to be way easier than making regular caramel)
    3. Make cookie dough
    4. Make brownies
    5. Make ice cream
    6. Assemble sandwiches

    Like I said, a few steps. But, I am not sorry. Why? Make the dessert and you will find out.

      Also, if you don’t need cholov Yisroel milk then it is very very easy to find kosher sweetened condensed milk and you can easily skip the first step. And truthfully, as fun as ice scream sandwiches are, I stand by this ice cream so proudly, that I would say, even if you serve the ice cream by itself, with na simple bowl and spoon, it will still be the best dessert you have ever made.

    So, how ever you do it, in what ever form, or flavor I strongly urge you to include this in any dairy menus you have planned. And, if you choose to skip any real food in favor of just having a bowl of this ice cream as your meal, that too, will be completely understood (and maybe even admired!).

     

  • Homemade Sweetened Condensed Milk

    Ingredients

    1. 6 cups whole milk
    2. 2 & 2/3 cups sugar

    Instructions

    1. Place a large heavy bottomed pot over medium high heat.
    2. Add milk and sugar.
    3. Stir continuously for about 10 minutes until the sugar is completely dissolved and you begin to see steam rising from the milk.
    4. (It is important to keep stirring and watching the pot to prevent the milk from coming to a boil.)
    5. At this point, reduce the heat to the lowest possible setting or flame.
    6. Stir milk mixture every 15-20 minutes.
    7. Allow milk to slowly and gently reduce by half it’s volume.
    8. This will take around 2 hours.
    9. It will be thicker and syrupy at the end and slightly darker in color.
    10. Allow to cool and then pour into jars or Tupperware.
    11. Refrigerate until using.

    SALTED CONDENSED MILK CARAMEL

    INGREDIENTS:

    330g (10.5 oz) condensed milk

    1/2 tsp maldon salt or any coarse salt

    INSTRUCTIONS:

    Fill a small pot half way with water

    Place a medium sized glass bowl on top and make sure the water is not touching the bottom of the pot

    (If it is, just pour a little out)

    Remove bowl and turn on stove to medium low heat

    Pour the condensed milk into the bowl and cover with tinfoil

    Once the water begins to steam place the bowl back onto the pot

    Leave there to cook for anywhere from 1-2 hours

    Every 30 minutes, remove the tinfoil and whisk

    you will know its done when the condensed milk has darkened and looks like…caramel!

    Remove from heat and allow to cool for 15 minutes

    Stir in salt

    Enjoy!

    No-churn Chocolate Lovers Ice cream Sandwiches

    For the Ice Cream

    1. 3 cups heavy cream
    2. 2&1/4 cups sweetened condensed milk
    3. 1 cup cocoa powder
    4. 1 tsp vanilla extract
    5. 1 cup salted condensed milk caramel
    6. 1 jar fluff, poured into a piping bag or ziplock bag
    7. 1 batch chocolate chocolate chip cookie dough cut into small 1/4 inch chunks
    8. 2, 2 liter containers

    To assemble

    1. 1 batch sheet pan brownie

    For the ice cream

    1. In a medium sized bowl combine sweetened condensed milk with cocoa powder and vanilla.
    2. Mix thoroughly and set aside.
    3. Pour heavy cream into the bowl of an electric mix and beat until stiff peaks form.
    4. Once cream is whipped remove beater from the mixer.
    5. Pour condensed milk and cocoa mixture into the bowl and gently fold it in until it is all combined.
    6. Now its time to get layering!
    7. Pour a layer of the ice cream mixture into the bottom of the tupperwares.
    8. Next add a generous sprinkling of the cookie dough.
    9. Use the piping bag to squeeze the fluff in a zig zag form over the cookie dough.
    10. Drizzle the salted caramel over the cookie dough and the fluff.
    11. Next add another layer of the chocolate ice cream and top with another layer of the toppings.
    12. To fish off add one last layer of ice cream and end with a final layer of toppings.
    13. Cover tupperwares and place in a freezer for at least 5-6 hours.
    14. It is recommended to serve in bowls. Once you take a spoon and eat directly from the container it will all be over. You will not be able to stop at just one bite.

    To assemble sandwiches

    1. Cut sheet pan brownie in half and turn one half upside down.
    2. Place ice cream scoops allover the upside down half, leaving a half inch border.
    3. Use an offset spatula to flatten out ice cream scoops.
    4. Place the other half of the brownie right side up ontop of the ice cream.
    5. Refreeze.
    6. Once frozen cut into single serving ice cream sandwiches.
    7. Refreeze until serving.

    Notes

    1. This base can be changed to meet your likings.
    2. If you don’t want chocolate ice cream you can simply leave out the cocoa powder.

    Here is a list of variations

    1. Vanilla: leave out cocoa powder
    2. Coffee: replace cocoa with 4 tsp instant coffee mixed with 2 tsp hot water. (let cool before adding)
    3. Peanut butter: replace cocoa with 1/2 cup peanut butter
    4. Strawberry: puree 1/2 cup fresh or frozen strawberries and replace wit cocoa
    5. Mint: Replace cocoa with 1-2 tsp mint extract (depending on your taste) + 2 tsp green food coloring gel

    In addition to changing u ice cream flavors you can also bbq creative and change up any of the toppings. Heres some fun suggestions and combos

    1. sprinkles
    2. nuts
    3. chocolate chips
    4. caramel chips
    5. peanut butter chips
    6. white chocolate chips
    7. cut up candy bars (kit Kats, milky ways, snickers, peppermint patties)
    8. crushed pretzels + slated caramel + milk chocolate chunks
    9. cut up raspberries + granola + milk chocolate chunks
    10. cut up peppermint patty + crushed almonds + chocolate chips
    11. cut up strawberries + cookie dough + salted caramel
    12. roasted peaches + crushed oatmeal cookies + cinnamon
    13. The list of things you can do with this stuff is endless. So be creative and have fun!!!
