• When a dish makes your house smell so intoxicatingly, off the charts good, that all the little hands run over and it is actually difficult to take the picture because they refuse to step away from the source of that scent you know you’ve struck recipe gold!

I was soooo hopeful when I dreamed up this dish in my head. I woke up Friday morning omg knowing exactly what I wanted and I could already taste it!!!! Friday night, when I took that first bite, and my warm, comforting, apple and and granola dream came to life I was sooooo happy.

Not to mention, it took actual minutes to prepare. Coring the apple took a second each, and because the “granola” is made with oil, it was soooo simple to throw together.

In fact, this shabbos, when we make these again, I’m passing the job on to one of the little people!

Also, it has apples. And oats. So that’s bari enough for #chodeshbari shabbos right!?

  • Ingredients

    1. 6 apples, washed and cored (I used green)
    2. 3/4 cup brown sugar, divided
    3. 1 Tbsp bourbon (or whiskey, amaretto…)
    4. 1 Tbsp vanilla extract
    5. 3/4 cup quick cooking oats
    6. 1/2 cup flour
    7. 1/2 tsp kosher salt
    8. 1/4 c canola oil

    Instructions

    1. Preheat oven to 350°f.
    2. Grease a 9 inch circular or rectangular oven to table baking dish (just make sure the apples fit inside!).
    3. Sprinkle 1/4 c of the sugar on the bottom of the pan.
    4. Drizzle vanilla and bourbon on top of the sugar.
    5. Place cored apples on top.
    6. In a bowl, combined the rest of the ingredients and mix until well blended.
    7. Stuff about 2 tbsp worth of granola mixture into the core of each apple and sprinkle remaining mixture in the nooks and crannies between the apples.
    8. Literally grease a large piece of foil with non stick spray and cover the baking dish tightly.
    9. Place in the oven and bake for 45 minutes.
    10. Remove cover and bake an additional 10 minutes.
    11. Serve hot and enjoy!
