HERBY PARMESAN GREMOLATA

INGREDIENTS:

  • 1 cup cilantro leaves , finely chopped
  • 1 cup parsley leaves , finely chopped
  • 1/2 cup pitted Kalamata olives, finely chopped
  • 1 red Thai chile, minced (remove ribs and seeds if you want less heat!)
  • 1 tbsp tiny capers
  • 2 cups Parmesan cheese
  • 3 tbsp olive oil
  • 1 tbsp + 1 tsp red wine vinegar

Cooking steps

Step 1

Mix everything to combine. Plate, add a small drizzle of olive oil over the top, serve with good bread and enjoy!
