Baked potatoes w/ broccoli + cheese
INGREDIENTS:
- Potatoes
- Frozen broccoli – 2 bags
- Salt
- Pepper
- Shredded cheese (any kind)
- (Feel free to add any veggies you like: sautéed onions, corn, peppers, zucchini…)
Cooking steps
Step 1
Scrub each potato clean and wrap in foil. Place in a 180°C (350°F) oven for 1&1/-2 hours until soft and tender.
Step 2
Place broccoli on a parchment lined baking sheet. Spray a drop of non stick spray over the broccoli and sprinkle 1 tsp salt and 1/2 tsp pepper. Roast in 180°C (350°F) for 35-40 min.
Step 3
Remove, cut open. Make slits with a knife. Add a pat of butter to each half. Sprinkle a bit of salt and pepper. Use knife to work it in to potato. Sprinkle a tiny bit of cheese. Add broccoli, and more cheese. Return to oven and cook until cheese is golden and bubbly.
