you throw a bunch of stuff in a crockpot, leave to the beach and come home to your house smelling so good you could eat the air!!!
I made the chicken into pulled bbq chicken sandwiches bc yum, but I think the chicken would be just as delicious not pulled, served or rice or with a salad. Ooooor, shred it and stuff it into wontons and fry those up. Mmmmmmm.
May have to make another batch this week.
Recipe:
8 bone in chicken breast
1 large yellow onion, halved, thinly sliced
1 cup BBQ sauce
1/4 cup dark brown sugar
2 Tbsp Dijon mustard
2 Tbsp fish-free Worcestershire sauce
1 Tbsp granulated onion
2 tsp granulated garlic
2-3 tsp spicy paprika (or cayenne pepper)
1&1/2 tsp kosher salt
1 tsp black pepper
Add everything to a crock pot. Stir. Cover and set crock pot to medium heat. Cook undisturbed for 6-7 hours.
To shred, remove chicken pieces. Shred. Strain sauce to make sure there is no little bones. Return chicken to juices. Serve and enjoy!

Grilled Mexican style corn on the cob

This Mexican style grilled corn starts with fresh summer corn, olive oil, and a simple spice rub that takes less than 5 minutes to make. The spices caramelize on the grill, enhance the natural sweetness of the corn, and turn an everyday side dish into something people actually get excited about.
Easy to prep ahead. Perfect for BBQs, cookouts, Shabbos, summer dinners, and entertaining.
You can also grill the corn, cut it off the Cobb and use it to make the yummiest corn salad.

Recipe:
10 ears fresh corn, shucked
3 Tbsp Maggie loves tacos spice blend (or your favorite taco style seasoning)
3 Tbsp brown sugar
1 tsp cayenne pepper
Olive oil
Combine spices blend, brown sugar and cayenne pepper in a a bowl. Mix well. Drizzle corn with a light drizzle of olive oil. add about 1- 2 tsp of spice blend to each ear of corn and rub really well so it gets in between all the kernels. Set aside. (You can do this a day in advance by the way!). Reserve remaining rub. When grill is hot add each piece of corn and sprinkle a little bit of remaining rub. Cool corn until slightly charred on each side rotating so that all sides are cooked. I like to add a bit more spice blend as I rotate so that when the spices hit the hot corn it melts onto it! Serve hot or room temp and enjoy!!!!
CUCUMBER RIBBON SALAD
This might be the prettiest cucumber salad I’ve ever made. 🥒✨
The ingredients aren’t revolutionary.
The technique is.
Instead of chopping cucumbers, shave them into thin ribbons, roll them into spirals, and suddenly every bite has incredible crunch, texture, and sauce in all the right places.
It’s fresh, refreshing, ridiculously satisfying, and looks like something you’d order at a restaurant.
Perfect for summer lunches, BBQs, Shabbos meals, entertaining, healthy snacks, and anyone who loves an easy cucumber salad recipe.
Save this one because once you try cucumber ribbons, you’ll never look at a regular cucumber salad the same way again.
RECIPE:
for the dressing:
1 inch piece ginger, minced
3 cloves garlic, minced
1/4 cup soy sauce
2 Tbsp sesame oil
Juice of 2 limes
For the salad:
7-8 Persian cucumbers, washed well
1 jalapeño thinly sliced
Peel cucumbers to create ribbons. As you get to the seeds in the center rotate the cucumber and peel next side. Continue u til just a thin strip of seeds remains (and eat that! We don’t need it). Create smile piles with the strips of each cucumber. Then spiral each pile and place into a a dish. Put the piles right next to eachother so they hold their shape. Combine dressing ingredients in a jar. Shake. Pour over cucumbers and add jalapeño. Serve and enjoy!!!

Preheat oven to 175°c (350°f). Add everything tin a bag. Shake to coat. Place on baking sheet. Bake uncovered 45 min. Serve hot and enjoy!
Sour Frozen Fruit Roll-Up Skewers
HOT TAKE: fruit tastes better wrapped in candy. 🍋🟩🍇🤭
This might be the easiest summer snack you’ll make all season.
Fresh fruit wrapped in fruit roll-ups, coated in a sweet-and-sour sugar mix, then frozen until icy, chewy, and ridiculously good. The best part? Making them is half the fun. Kids love assembling them, adults can’t stop eating them, and they’re perfect for pool days, camp afternoons, BBQs, and those long hot Shabbos afternoons.
Save this one for summer.
Recipe:
For the sour sugar:
1 cup sugar
2 Tbsp citric acid
1/4 tsp salt
For the skewers:
2 boxes fruit roll ups
2 cups cut up fruit into 1 inch pieces
(I used kiwi, pineapple and grapes!)
Cut each fruit roll up into 4. Wrap each piece of fruit in fruit roll up. Place 3 -4 pieces on a skewers. In a bowl combine ingredients for sour sugar. Mix well. Sprinkle some of the mixture over both sides of each skewer. Place in the freezer overnight. Serve ice cold and enjoy!
*Note: if feeding to small children make sure to cut the fruit to appropriate sizes

Recipe
1/4 cup mayo
1/4 cup franks hot sauce
1/2 kilo ground chicken
2 tsp granulated onion
2 tsp granulated garlic
1/2 tsp cayenne
1/2 tsp kosher salt
1/2 tsp pepper
2&1/2 cups panko bread crumbs
Preheat oven to 200°C (400°F).
In a small bowl, combine the mayo and hot sauce. Mix well and set aside.
In a large bowl, combine the ground chicken, granulated onion, granulated garlic, cayenne pepper, kosher salt, and black pepper. Mix well until evenly combined.
You’ll need 2 baking sheets of the same size for this recipe. Turn one baking sheet upside down and line it with a piece of parchment paper. Lightly grease the parchment with nonstick spray. Place the chicken mixture in the center. Cover with another piece of parchment paper and gently press down. Spray the top piece of parchment lightly with nonstick spray. Using a rolling pin, roll the chicken into a large rectangle, about 1/2-inch thick. Remove the top parchment paper.
Brush with half of the hot sauce mixture and sprinkle with half of the breadcrumbs. Place a clean piece of parchment paper over the breadcrumbs and top with the second baking sheet. Holding both baking sheets together, carefully flip them over. Remove the top baking sheet and gently peel away the parchment paper.
Brush with the remaining hot sauce mixture, sprinkle with the remaining breadcrumbs, and lightly spray with nonstick spray.
Bake uncovered for about 35 minutes, or until crispy and cooked through.
Serve hot with a huge salad and a side of ranch!
