- 6 long scallions, green + white parts (washed and trimmed)
- 1 red thai chile, very thinly sliced on an angle
- zest of lime
- 2 limes, juiced
- 1/2 tsp salt
- 1/4 tsp coarse black pepper
- 3 Tbsp. extra virgin oil
- Add all the ingredients to a large bowl.
- Mix well to combine.
- This salad gets better as it sits!
