Moroccan-y Carrot Slaw

- 400g grated carrots
- 1 jalapeño, very thinly sliced (optional)
- 1 tsp. salt
- 1 tsp. pepper
- 1 tbsp. Paprika
- 1/4 cup cider vinegar
- 1/4 cup honey
- 1 Tbsp. Extra virgin olive oil
- 1 Tbsp. Dijon mustard
- 1/4 c pomegranate arils
- Put everything in a bowl and mix thoroughly.
- Allow to sit for at least five minutes then mix again.
- Taste to adjust seasoning.
- Can store in the fridge for up to 5 days.
- It will soften as it sits.
