Fennel and Apple Slaw

- 2 fennels, very thinly sliced
- 1 green apple, cut into matchsticks
- 1/4 cup cilantro
- 1/2 tsp. Salt
- 1/4 tsp. Pepper
- 1 Tbsp. cider vinegar
- 1/4 cup lime juice (about 2 limes)
- 3 Tbsp. honey
- Put everything in a bowl and mix thoroughly to combine.
- Let it sit for a few minutes so the flavor can combine.
- This can stay in your fridge up to five days.
- It will soften as it sits.
